I bought these lovely pink and white meringues a while back. Although I don’t like the taste that much it’s easy to see why I couldn’t resist buying them.
One of my biggest supporters
I have a few supporters at home that are rooting for me to get my Law degree. One of my biggest supporters is our colourpoint persian called Boeta. Whenever I’m studying or reading up on cases he will sit (mostly sleep) next to me. Maybe Boeta is secretly aspiring to also be a lawyer himself one day.
Beautiful autumn
When the trees start shedding their leaves and the grasslands change from green to brown and golden yellow, you know it’s autumn. I love autumn, but the last couples of weeks I’ve been so busy that it felt as though I almost missed the transition from summer to autumn.
Autumn isn’t just a beautiful and colourful season, it also offers in some ways the best weather. Here is South Africa the temperatures are pleasantly warm, but not as hot as it was a few months ago. The temperatures will however become colder as the season gets on and winter takes its place.
Spinach and Feta Quiche
I make this recipe quite often. It is so easy to make.
Crust:
Mix half a cup of butter, half a cup of grated cheddar cheese and one cup of flour together. Take the dough and press a thin layer at the bottom of a medium casserole (see the one that I’ve used).
Now for the filling:
Melt butter in a pan. Fry the following until golden brown: One chopped medium to large onion, 125 grams of bacon and one garlic clove. Next: Cook 250 grams of spinach for 10 to 15 minutes. Remove from heat and cool off. Now: Mix the bacon, onion and garlic with the spinach and also put in 125 grams of feta cheese. Season with salt and black pepper, but be very careful not to overdo it as the feta cheese can already make the dish taste salty. Put all of the ingredients in the casserole. Now: Beat together three eggs and one cup of cream. Pour this over the casserole.
Optional: You can put a small amount of grated cheddar cheese on the top.
Bake this for 30-45 minutes in 180 degrees.
I normally serve it with a side salad.
Baking
I’ve managed to do a bit of baking the last couple of days. I must admit that I’m no pro when it comes to these things, but it can be fun sometimes. It helps me to relax.
Here are one of the recipes I’ve tried out most recently. Please be advised that these cookies are very rich.
Recipe:
500 ml baking flour
5 ml baking powder
625 ml finely grated cheddar cheese
2 ml salt
250 grams of butter (do not use margarine)
Fine apricot jam
Instructions:
Mix the dry ingredients. Mix the butter into the dry ingredients. Mix the cheese with all of the ingredients. NOW: Roll the dough into small balls (should be the size of a R2 coin). Press it just a little bit down on the baking tray. Make a hole in the middle by using the back of a small spoon. Put a small amount of apricot jam into the hole of each cookie. Bake at 180 degrees. Make sure that the cookies’ colour isn’t too dark – it should still be light in colour when you remove it from the oven (see pictures). I normally bake mine for 10 to 15 minutes. Remove from oven and let it cool down. Put a small amount of apricot jam into each hole again.

Taking a break
I have been on study leave for a few days this week. I normally have so much other stuff that I want to do before actually getting around to study, but luckily managed this time to use the few days wisely.
In an attempt to take a break between studies I would normally take a walk through a field close to where we stay. I’ve managed to take a few pics as well.
